My tomatoes are producing like crazy which is awesome. My family can't keep up with eating them and I hate to see them go to waste. When my tomatoes are getting soft and the texture is just a little too mushy to eat I puree the tomatoes. I have a plastic fruit roll up tray that goes with my dehydrator with is really cool because I make fruit roll ups for the kiddos which they love. I digress. I pour the tomato puree onto the fruit roll up tray and leave it on the dehydrator for several hours. Once it's done then I put it into the coffee bean grinder and make it into a powder. I keep the tomato powder in a jar to store it. You can add water/milk to the tomato powder to reconstitute it whenever you need it. Of course you could always use the cans of paste/sauce from the store but why not have your own made from your own garden tomatoes?
Tomato Paste: 1 tablespoon tomato powder + 1 tablespoon water
Tomato Sauce: 1 tablespoon tomato powder + 2 tablespoons water
Tomato Paste: 1 tablespoon tomato powder + 1 tablespoon water
